My famous kale salad! It's no secret I love a kale salad and I while I no longer eat one nearly everyday for lunch, I still LOVE it. 

 

INGREDIENTS
Raw Kale (I use curly kale)
Hummus
Seasoned rice vinegar
Chopped fresh veggies
Lean protein of choice


DIRECTIONS:
Put about 2 cups raw kale in a bowl
Top with 2 to 3 T hummus
Add 2 T Seasoned Rice Vinegar
Massage the kale with your hands. That's right, it's time to play with your food and get messy! I usually just squish my fingers around to make sure the hummus covers all the kale and the kale gets softer.

Top with fresh cut veggies of your choice and lean protein.

** Meal Prep Tip: I like to keep fresh veggies in the fridge already cut up and ready to throw on a salad. It saves tons of time and I can eat in a flash!

***Also, for a crisp salad, eat right away. For a softer, more wilted kale, dress ahead of time and let sit for 30 minutes to a few hours in the fridge. I prefer it crispy and fresh!

I topped this with fresh crumbled tofu, sliced grape tomatoes, matchstick carrots and nutritional yeast!
